The Process of Mead Making
We brew our meads in our state of the art Taproom in our (how big are the conicals??????). We use traditional brewing techniques and use multiple varieties of honey, since each honey varietal imparts its own distinctive flavor to our meads.
At Clear Skies Meadery, we take great care in crafting our meads. let us walk you through the whole process of making mead.
First Fermentation Process
Firstly we select the type of honey for the meads and also determine the amount of honey to be used.
We blend the honey that we selected with water to produce a solution called “Must”.
In this step, we will add yeast to the mixture that we made, and feed them along the way until the end of the first fermentation process.
Second Fermentation Process
Various types of oaks, fruits and aromatic spices are added to the mixture that was prepared in the first fermentation process.
We let these additions steep in the mead for days to months until we get the right flavor profile.
Lastly we age our meads and, depending on the mead, they can be aged for three to twelve months before they are placed on tap.
